Thanks for posting this. He makes some good points. I have never done a century on a MTB but I have done quite a few on a road bike.
What is eaten and when to eat during the ride can vary tremendously from person to person but I find that eating a small amount every 15-20 minutes works better for me than waiting for an hour to eat a larger amount. For example, rather than eating a Clif bar at the end of each hour, prior to the ride I will cut several into bite-size chunks and stow then inside a jersey pocket in a zip-lock plastic bag with its top left open. That way, it is easy to reach back and grab a bite when needed. Trail mix also works nicely for this.
Most rest stops at rides have watered-down Gatorade which seems to work for a lot of people, but I carry my own powdered energy drink with individual servings in snack-size zip-lock bags. I reuse the bags until they wear out so a box lasts a very long time.
Getting caught up in the excitement of a ride or race and neglecting to drink and eat sufficient amounts invites hitting the wall long before the finish so I wear a Wally Mart bluelight special watch with a loud alarm and set it to remind me when it is time to munch.
