Should not have a problem if you wear hunter orange and use caution at the times of the day that hunters are in the woods.
At any rate there is no hunting on public lands in South Carolina on Sundays so all of the mountain biking trails in South Carolina (which is where the majority of our local trails are located) are good to go on Sundays.
For maximum safety there is no hunting at all allowed in the state parks at any time so Hickory Knob State Park and Baker Creek State Park are always a super safe bet. However once this initial week or so of hunting season settles in if you stay away from the daybreak and near dusk periods of the day you probably will rarely even see a hunter.
The FATS trail system is the only one closed for the first two weeks of hunting season but it is also open on Sundays!
